carrot zucchini bread

2 cups unbleached all purpose white flour
1 cup whole wheat flour
1 1/2 cups sugar
1 tablespoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon nutmeg
1/4 teaspoon baking powder
2 whole eggs
1 egg white
1/2 cup vegetable oil
3/4 cup applesauce
1 teaspoon pure vanilla
1 cup shredded zucchini
1 cup shredded carrot
1 cup chopped walnuts
(raisins or chocolate chips could be subbed for part or all of any of the last three ingredients to change it up a bit)

preheat oven to 325. combine all dry ingredients and mix well with a whisk or spoon. combine eggs, oil, applesauce and vanilla. whisk until well combines. pour liquid mixture in to dry mix. add carrots, zucchini and walnuts. mix well. pour in to two well greased 9 x 5 loaf pans. bake for 1 hour to 1 hour 15 minutes.

***to make vegan, sub bananas for a slightly different taste or EnerG would work too!
