jerk seitan

1 hour 45 minutes (including marinate and cooking time)

2 lbs seitan (wheat gluten)
1 tablespoon allspice
1 tablespoon thyme
1 1/2 teaspoon cayenne pepper
1 1/2 teaspoon black pepper
1 1/2 teaspoon ground sage
3/4 teaspoon cinnamon
2 tablespoons minced garlic
1 tablespoon sugar
1/4 cup olive oil
1/4 cup low sodium soy sauce
3/4 cup white vinegar
1/2 cup orange juice
juice of one lime
1/2 habanero pepper
2 green onions
1 cup white onion
1 teaspoon arrowroot or corn starch

blend all ingredients except seitan. marinate seitan in blended mixture for 1 hour. simmer on low for 20-30 minutes until thoroughly cooked. serve over rice.
