baked cheesy tortellini with spinach

40 minutes

8 oz tortellini, cooked for 3-4 minutes
1/2 jar spaghetti sauce ( I like Newman's Own Sockarooni)
8 oz frozen spinach, thawed and squeezed well
3 cloves garlic, minced
2 oz feta cheese, crumbled
4 oz mozzarella, shredded (or sliced buffalo mozza)
2 oz parmesan, shredded
1 cup sour cream
1/2 cup milk (or cream for something totally rich)
sea salt
fresh ground pepper

preheat oven to 400. place cooked and drained tortellini in the bottom of a casserole dish, add spaghetti sauce, spinach, garlic, feta and salt and pepper. gently mix. in a mixing bowl, add sour cream, milk and mozza. add salt and pepper to this as well. i use quite a bit, like a teaspoon and a half of each, but better to have to add more later than it be too much for you to enjoy, so use your judgment. pour mixture over tortellini, making sure that it seeps down in to the tortellini, spinach mixture. top with parm. bake uncovered for 20 minutes. turn to broil and leave in for another 10 minutes or until it starts to bubble and brown on top. we had this last night and i served it with a caeser salad and a rustic garlic bread. it is all gone after lunch today. =)
